B Bencana alam sering menyebabkan terganggunya operasionaldapur umum akibat keterbatasan fasilitas memasak serta lamanya prosesmobilisasi dan penataan peralatan di lokasi pengungsian. kondisi tersebutdapat menghambat penyediaan makanan bagi korban bencana yangmembutuhkan penanganan secara cepat. penelitian ini bertujuanmerancang portable kitchen unit sebagai fasilitas memasak darurat yangmampu mendukung operasional dapur umum pada area pascabencanamelalui desain yang memiliki mobilitas tinggi, mudah dioperasikan, sertamengintegrasikan area memasak, area kerja, dan penyimpanan dalam satuunit. penelitian menggunakan metode kualitatif dengan pendekatan usercentered design (ucd). pengumpulan data dilakukan melalui observasi dikelurahan rawa terate dan kampung parigi, wawancara dengan pihakkelurahan serta relawan dapur umum, dan studi literatur mengenai dapurumum, trailer, sistem towing, ergonomi, material, serta teori warna. hasilpenelitian menunjukkan bahwa kebutuhan utama pengguna meliputikemudahan mobilisasi, kecepatan operasional, efisiensi penyimpanan,serta kenyamanan area kerja. berdasarkan hasil analisis tersebut,dirancang portable kitchen unit berbentuk trailer kompak yang dilengkapicanopy folding system, sistem penyimpanan terintegrasi, area kerjaergonomis, serta sistem towing yang mendukung mobilisasi menuju lokasibencana. produk yang dihasilkan diharapkan mampu meningkatkanefisiensi operasional dapur umum dan mendukung penyediaan makananbagi korban bencana secara lebih cepat dan efektif.
N Natural disasters often disrupt public kitchen operations due to limitedcooking facilities and the time-consuming nature of mobilizing and settingup equipment at evacuation sites. such conditions can hinder the provisionof food to disaster victims who require urgent assistance. this study aimsto design a portable kitchen unit as an emergency cooking facility capableof supporting public kitchen operations in post-disaster areas featuring highmobility, ease of operation, and an integrated layout combining cooking,workspace, and storage areas into a single unit. the research employs aqualitative method using a user-centered design (ucd) approach. datacollection involved observations in rawa terate and kampung parigi,interviews with local officials and public kitchen volunteers, and a literaturereview covering public kitchens, trailers, towing systems, ergonomics,materials, and color theory. the results indicate that key user needs includeease of mobility, operational speed, storage efficiency, and workspacecomfort. based on this analysis, a portable kitchen unit was designed as acompact trailer equipped with a folding canopy system, integrated storage,an ergonomic workspace, and a towing system to facilitate transport todisaster sites. the resulting product is expected to enhance the operationalefficiency of public kitchens and support the faster, more effective provisionof food to disaster victims.
